### *SALAD BAR / PRODUCT DISPLAY / ICE PACKING Usage Calculation

Ice Usage for packing or for a product display, such as for a salad bar or fresh fish display case, is calculated by cubic feet needed during a 24-hour period. This would be length of the display multiplied by the width multiplied by the depth of the ice pack (L x W x D). Note that since ice depth is often less than 12 inches, depth in inches will need to be converted to feet by dividing by 12 (e.g. ice pack depth of 6 inches would be 6 divided by 12 = 0.5 feet).

### DAILY ICE USAGE - SAMPLE CALCULATION

Calculate your daily usage based upon your operation and each application type.

For example, a restaurant has 100 table seats, each with 4 guest turnover per business day, a bar with 15 seats, and a salad bar 8 feet by 3 feet with an ice pack depth of 6 inches.

Step 1. 100 Table Seats x 4 guest = 400 Customers x 1.5 LB Ice = 600 LB FULL CUBE Ice Daily Usage

Step 2. 15 Bar Seats x 3 LB Ice Per Customer = 30 LB GOURMET CUBE Ice Daily Usage

Step 3. Salad Bar 8 feet x 3 feet x 0.5 feet = 12 cubic feet x 35 LB Ice = 420 LB FLAKE Ice Daily Usage

Step 4. Three different applications requiring three different types of ice means three ice machines will be needed at the restaurant. IF the Bar utilized Full Cube Ice like the restaurant, you might be able to make do with only 2 machines, but someone will be shuttling ice from the back of the house to the bar.
